I decided to port the recipes I had posted to the separate account [personal profile] square_meals to this community instead, because it's easier to add new posts that way.

You know how someone will see a foreign recipe in a movie or something and make their own highly inaccurate version missing all the core ingredients?

Well this is that, from an Australian who's never actually eaten pumpkin pie (I did have a dairy free pumpkin pie frappe when I went to Disneyland!). Notably, it does not contain pumpkin, because I don't like it.

Rice Cooker:
1 rice cooker cup short grain rice
2 rice cooker cups oat milk
1 banana
dash ginger, cinnamon
pinch salt
vanilla essence
1.5 Tb brown sugar
1 beaten egg

Everything but sugar and egg in rice cooker. 1 hr 10 mins on soup setting. Mix in egg and sugar.

Stove Top:

Basically just this recipe, halved. Because I never seem to be able to find the quantities for uncooked rice when I want them.

I got these little purple and white eggplants as an extra from my fruit and veg place, so poked around for eggplant recipes and ended up smooshing together Simple Baked Eggplant Recipe and Traditional Baba Ghanoush. It wasn't mind-blowing but I did eat it all without really noticing.

Inspired by Dylan Hollis's Pumpkin Quickies, but that's just a tin of pumpkin and a spice cake mix, which if nothing else are not things you can easily buy here. Similar ingredients to my previous cake recipe but I like the way they work together in this form a lot more.

Make mango jelly/jello with dairy free milk in place of water. It forms two layers naturally.

Not much of a recipe but I kept thinking "I know I've used dairy free milk in jelly before but can't remember what happened", so. It forms an extra creamy layer on top and lightly creamy layer below. This tastes nice if you like the concentrated flavour of the dairy free milk, and terrible if you don't. Mango flavour worked best of the ones I've tried.

Not a specific recipe but:

1) I find I much prefer bone-in chicken thighs to both drumsticks and general "chicken pieces" for both roasting and stewing. They are meatier and tastier than drumsticks imo, and a relatively even size. They produce a lot of fat, so for stews I pull out the meat and veggies with a slotted spoon and let the broth sit for a day in the fridge so the fat solidifies at the top.

2) I tried green pawpaw/papaya in a curry and it wasn't bad. Not something I'd seek out, but an ok way to use up a pawpaw I inadvertently cut open before it was ripe. I used this recipe as a very vague inspiration, specifically the simmering time of 10-15 minutes.

These are only middling but easy and taste ok when I have bananas and crave sweet pastry.

(EDITOR NOTE: This is the point where it occurred to me to wonder if dreamwidth has any sot of automatic importing I could have used. OH WELL)

I feel like this is fair use since I cut out the 90% of recipes I can't eat and added some more, and it will plausibly inspire some of you to buy your own copy (it's good!)

Using those little yellow squash, which are apparently "patty pan" or "scallop" squash which really interferes with finding recipes.

Basically just this recipe for Squash and Pancetta Pasta with the ingredients I had to hand.

There's a lot of advice online for making sushi, it's pretty easy in general, but this is a specific half-assed approach I take which is an especially easy and tasty way to use leftover Japanese takeaway. It does require preparation while the rice is still warm.

Cam and I bought this cookbook when we left home in 2001 and used it a bunch, then it ended up under a pile of stuff until I happened upon it while tidying up this weekend. But in the end most of the recipes weren't very good and our tastes have changed. Since it's falling apart I'm going to throw it out but I wanted to record two recipes I remember liking.

Inspired by this recipe: a runny chocolate cake mix cooked as pancakes in a small greased pan over a medium-low heat with a lid on top for 3 minutes, and then flipped and cooked for another minute. Turned out pretty well! I added pecans to the mix so it's basically a health food.

(EDIT: Last crosspost! Phew! Going to wait a bit before posting anything new so subscribers don't get their reading pages flooded)
