Big Banana Pancake
Feb. 15th, 2024 12:27 pmVERY tired but wanted to get this down as much as I can remember with my sleepy brain.
The two keys here are (a) Keeping some of the banana as little unmashed pieces to keep the batter moist without being too wet (b) cooking on a lowish heat to stop the sugary batter from burning.
Note that this is a single large thick pancake.
Ingredients:
1 soft banana
1 egg
Large dashes of cinnamon and ginger
1 Tb sugar
A pinch of salt if I'd remembered
1/3 cup self raising flour.
Method:
Lightly mash banana with a fork, so it's barely in pieces. Fold in everything except the flour. Add flour and fold in until no dry flour is visible. If the batter seems too bit dry (it should be lumpy cake batter consistency), mix harder to turn more of the banana into goo, but don't overmix.
Let this sit for a minute or two (eg as long as my electric burner takes to heat up). Heat up a 10cm diameter small nonstick frypan to medium heat (4/6) and coat with a dab (1/2 tspish) margarine. Once the margarine is melted and just starting to sizzle, add the batter.
Fry for a few minutes, until the top is dotted with bubbles. Flip and cook on a slightly lower heat (3/6) for a minute or so, making sure it doesn't burn. (No exact cooking time because I followed my gut)
Eat with maple syrup.
