I'm not sure when I'd have these ingredients to hand again but these were both quite nice!
The mushrooms were roasted for about half an hour with garlic and onion oil.
Recipe 1: Quasi-pizza
Garlic naan, toasted in the sandwich press with a few drops of water, then topped with avocado, salt and pepper, a few chopped up roasted mushrooms, and a chopped up still warm beef and herb sausage.
Recipe 2: Beef stew
2 chopped potatoes, one peeled and chopped carrot, one chopped stick of celery. Browned in garlic and onion oil, then I added:
about a cup of Chinese takeaway long soup (minus the meat and noodles)
a small dollop of American mustard
about a teaspoon of quince paste
idk a cup of browned beef mince
about 6 roasted mushrooms, chopped
a dash of fish sauce
lots of salt and pepper
and simmered for however long it took for the potatoes to be soft, maybe 45 mins.
The mustard is disagreeing with me a little but it definitely added to the flavour.
