Cam and I bought this cookbook when we left home in 2001 and used it a bunch, then it ended up under a pile of stuff until I happened upon it while tidying up this weekend. But in the end most of the recipes weren't very good and our tastes have changed. Since it's falling apart I'm going to throw it out but I wanted to record two recipes I remember liking.
I haven't cooked these in a While so I'm relying on past!me's notes/memories.
Anzac Biscuits (with no coconut variant):
Ingredients:
1 cup plain flour
2/3 cup sugar
1 cup rolled oats
1 cup coconut (or more rolled oats)
125g margarine
1/4 cup/90g golden syrup
1/2 teaspoon bicarbonate of soda
1 tablespoon boiling water
Method:
Preheat over to 180C. Line baking tray with baking paper.
Mix dry ingredients in a bowl.
Gently melt margarine and golden syrup in a pot or the microwave, stir.
Dissolve the bicarb in the hot water, add immediately to the melted ingredients, then mix into the dry ingredients.
Put tablespoon sized blobs on the baking tray, and cook for 15 minutes. Transfer to a rack to cool.
Dumplings for stew:
1 cup self raising flour
1/4 teaspoon salt
ground pepper
30g margarine
1 egg
1/4 cup milk
1 tablespoon chopped parsley: optional
Rub the margarine into the dry ingredients. Add wet ingredients and mix into a dough. Shape into 3cm balls with floured hands. Drop into the stew/soup 20 minutes before the end of cooking time, and cover the stew.
And that's it out of 500ish pages. There were a few other recipes I would still cook if it wasn't for having developed various intolerances, but otherwise...well, I guess it gave us somewhere to start from.
EDIT: Wait, I put it down on the bed after finishing this post, intending to throw it away, but Darcy has sat on it, so I guess it's hers now.
