Sesame Eggplant
Feb. 15th, 2024 12:13 pmI got these little purple and white eggplants as an extra from my fruit and veg place, so poked around for eggplant recipes and ended up smooshing together Simple Baked Eggplant Recipe and Traditional Baba Ghanoush. It wasn't mind-blowing but I did eat it all without really noticing.
Ingredients:
4 cups water
1 tablespoon salt
2 small eggplants
oil baking spray
sesame seeds
Extra salt for seasoning
Method:
Mix the water and salt in a bowl.
Chop eggplant into bitesize pieces and put in the water. Put a lid or plate over the top to keep it submerged. Let it sit for 30 mins.
Preheat oven to 190C. Put a piece of baking paper on a baking tray and spray it with oil.
Drain eggplant and dry with paper towels. Place on the baking paper, spread out. Drizzle with garlic oil then use a pastry brush to even it out. Sprinkle with sesame seeds.
Bake for 10-15 minutes. The spruce eats recipe says "until the bottoms are browned" but mine cooked pretty evenly, maybe because of the baking paper. So instead of turning everything over I just mixed everything up a bit to stop the loose sesame seeds from burning. Cook for another 10 minutes.
Serve sprinkled with salt.
I really like the texture of the little crunchy sesame seeds but the flavour was missing something. Baba ganoush has lemon juice which I can't really eat but maybe a little bit of vinegar? I feel like it needs sweetness to balance to slightly bitter sesame seeds. One recipe suggested wine which I also can't eat but maybe fruit juice? I have some apple juice but it just seemed too odd a flavour combo so I didn't try it. Like a coward.
Or maybe in a sandwich/on bread with lots of pepper. Quince jam?? Hmm!
