Leftover Vegetable Fritters

Ingredients:
About 3/4 cup cooked vegetables (eg the cabbage and carrot mix from the baked fish)
1 egg
1/4 cup self raising flour + extra
splash of (oat) milk + extra
salt and pepper
Method:
Mix ingredients, add extra flour/milk if it's not the right consistency.
Fry in an oiled pan over a medium heat for a few minutes each side. Onion and garlic oil is great here. Tastes good with garlic aoli.
