Baked Fish and Vegetables

2 frozen fish fillets, preferably something fatty like baramundi or salmon
A bag of pre-chopped cabbagey vegetables OR a few chopped potatoes/peeled carrots and mushrooms
Some mixture of:
marinade (unless the fish comes marinated)
Onion and garlic oil
sesame seeds (for teriyaki)
Method:
Preheat oven to 220C. (If using potatoes, you can put into an unpreheated oven for the start of the cooking)
Put vegetables in an appropriately sized metal cooking tray or casserole dish. Add salt and pepper and maybe some herbs or ginger/tumeric.
If using potatoes or carrots, spray with oil and put in to pre-cook for 15 (pre-heated) or 30 (unpreheated) minutes and then mix up and if relevant add the mushrooms.
Put fish on top, skin side down. Drizzle with marinade, and then with the onion and garlic oil. Add sesame seeds if relevant.
Bake for 20 mins.
Move the fish to one side, mix the vegetables on the other side, then swap, putting the fish skin side up. Maybe add some more oil/marinade/salt.
Bake for 10 minutes.
Serve as-is or with noodles. Serves 1 hungry person with leftover vegetables. Leftover cabbage mix is nice in puff pastry.
Another option: Salmon + soy sauce + teriyaki marinade + garlic oil+a dab of margerine. Chopped green capsicum and a sprinkle of brown sugar in the last 5 minutes.
