Too tired for a good writeup today but these were pretty good for a 'what I have in the house' recipe.

100g-ish cold peeled steamed/boiled potato(*)
100g-ish tin of flavoured tuna in oil, drained
Seasonings: salt, pepper, citric acid, herbs, etc
1 egg, sscrambled, quartered
plain flour
spray oil

Mash up the potato with any seasonings. Add and mix in the tuna until it's all fairly pastey.

Sprinkle flour on a plate.

Add about 1/4 of the egg, and mix everything together. Form patties and coat in flour.

Heat up frying pan to medium heat. Spray with oil, put on patties, then spray each of them with oil until they look 'damp'. Cook for 3 minutes each side.

Mix the remaining egg with any remaining tuna mix and fry up for a sort of omellettey thing. I had one with a patty in some bread and it was nice.

(*) I had some cold unpeeled steamed potatoes and just peeled off whatever skin came off easily, which was enough.

All the recipes I found online use breadcrumbs but I didn't have any, and flour worked ok. If you DO have breadcrumbs then just look up any tuna patty recipe for the proportions.
